Gazpacho has ancient roots. It was traditionally been considered a dish from inside Andalusia, where olive oil and vegetables are abundant and summer is dry and hot. For this reason it’s commonly known as an Andalusian gazpacho. Based on the traditional Andalusian recipe with freshly harvested vegetables: fresh tomatoes, fresh peppers, fresh cucumber and fresh onions, seasoned with extra virgin olive oil, salt, wine vinegar, garlic and spices.
