⅔ cup black Hojiblanca olives
⅓ cup fresh cheese
2 sprigs basil
Extra virgin olive oil
Sea salt and freshly ground pepper to taste
1. Cut the tomatoes and oranges into cubes without their skins. Combine them with olives in a bowl. Season with oil and salt.
2. Cut the avocado and fresh cheese into cubes, and add to the salad.
3. Garnish with a few basil leaves and lemon zest to add flavour.
